KDS (Kitchen) Report

What it does

The KDS report (Reports → KDS) shows how your kitchen is performing — how long food takes to cook, how each cook is doing, how much each station is handling, and where things slow down. It reads from the Kitchen Display System for the date range you choose. See Reports Overview for the shared date range, granularity, Apply, and PDF export controls.

Tabs and parameters

• Cooking Time — Cooking Time Over Time. Average time to cook, plotted across the range so you can spot trends and bad days. Parameters: date range + granularity (Hourly / Daily / By Weekday / Monthly).
• Cook Performance — Cook Performance. Average prep time per cook, so you can compare who's fast and who's under pressure. Parameters: date range.
• Stations — Station Throughput. How much each kitchen station is putting out. Parameters: date range + Group by — Station or Menu category.
• Bottleneck — Bottleneck Analysis. For each station, how long items wait in the queue versus how long they actually cook — highlighting where the hold-up really is. Parameters: date range.
• Item Prep Time — Item Prep Time. Average preparation time for each menu item, to find the dishes that slow the line. Parameters: date range.

Key things to know

• The KDS report only has data if your kitchen uses the Kitchen Display System — cooking and prep times come from items being moved through the KDS board.
• Bottleneck separates waiting in the queue from actual cooking: a long total time caused by queueing points to staffing or sequencing, while long cook time points to the dish or station itself.
• Cook Performance and Item Prep Time are averages over the range — a short range reflects a single service, a long range smooths across many.
• PDF export lets you include any of the Cooking Time, Cook Performance, Stations, Bottleneck, and Item Prep sections.

FAQ

Q: The KDS report is empty — why?
A: It's built from Kitchen Display System activity. If your venue doesn't use the KDS board, or nothing was cooked in the selected range, there's nothing to show.

Q: What's the difference between the Bottleneck and Cooking Time tabs?
A: Cooking Time is the average time to cook over the range. Bottleneck splits each station's time into queue wait versus cook time, so you can tell whether delays come from a backlog or from the cooking itself.

Q: Can I see throughput per station instead of per category?
A: Yes — on the Stations tab, set Group by to Station (or Menu category for the other view).
